Choco-Chip Meringue Bites

Gram sent these regularly to Jane when she was at Stanford; they were called "Things in a Pan". They have been a favorite ever since.

Required Ingredients

1 ½StickMargarine
1 ½CupBrown Sugar (packed)
½CupGranulated (white) Sugar
Eggs (separated)
TeaspoonVanilla
CupSifted Flour
TeaspoonBaking Powder
¼TeaspoonSoda
¼TeaspoonSalt
BagChocolate Chips (6 oz.)
¾CupChopped Nuts (Gram used walnuts...because relatives grew walnuts)

Preparation Instructions

  1. Blend margarine, ½ cup of the brown sugar, granulated sugar, egg yolks and vanilla. Beat well.
  2. Sift together the dry ingredients and blend into the above.
  3. Pat the dough into a greased pan and sprinkle with the chocolate bits and nuts.
  4. Beat egg whites until frothy and then add 1 cup of the brown sugar. Beat until stiff but not dry. Spread onto the top of the pan. (Note that the chocolate bits and nuts stick to the beaten egg whites and sugar; so spreading is difficult. Try to drop somewhat evenly over the surface...NOT one big pile in the middle to be spread around.)
  5. Bake 35 to 40 minutes at 350°.
