Red Pepper Walnut Dip
Charlie once had a girlfriend who did not like to cook, but always wanted to be helpful. She discovered that we all loved this dip and always brought it to serve on the deck at Fallen Leaf with Pita triangles. Makes about 1½ cups.

Required Ingredients

Small onion, chopped
Large garlic cloves, sliced
¼CupOlive Oil
12 oz jar roasted red peppers
½CupWalnuts, toasted and cooled
CupFresh Basil leaves
PieceCountry bread, crumbled
TablespoonFresh lemon juice

Preparation Instructions

  1. In skillet cook onion and garlic in oil over moderate heat, stirring until softened.
  2. In food processor blend remaining ingredients until nuts are chopped fine.
  3. With motor running gradually add onion mixture and blend until incorporated.
  4. Season with salt to taste and serve with pita or toast triangles.
