Chocolate Ribbon Cake

What makes this cake is the frosting. I have been known to cheat and buy 3 cake mixes, white, german chocolate and devils food and make one layer from each mix...either making two cakes, making left-over cupcakes or just wasting some batter.

Required Ingredients


Cake:
CupSwans Down Cake Flour
TeaspoonCalumet Baking Powder
½TeaspoonSalt
CupButter (or other shortening)
1 ½CupSugar
Eggs plus 2 egg yolks, beaten well
CupMilk
TeaspoonVanilla
OunceBakers unsweetened chocolate, melted and cooled
TablespoonSugar
¼CupHot Water
½TeaspoonSoda
TablespoonButter

Felicity Frosting
Egg whites, unbeaten
TablespoonWater
CupBrown Sugar, firmly packed
PinchSalt

Chocolate Glaze
OunceBakers unsweetened chocolate
TeaspoonButter

Preparation Instructions

  1. Sift flour once, measure, add baking powder and salt and sift again three times.
  2. Cream butter thoroughly, add sugar gradually and cream together until light and fluffy. Add eggs and beat well.
  3. Add the flour mixture alternatively with the milk a small amount at a time.beating after each addition until smooth. Add vanilla and beat in.
  4. Combine chocolate, sugar, hot water, soda and butter. Mix well and cool slightly.
  5. Grease three loose-bottom 9-inch layer cake pans. Pour a generous ? of the batter into one pan.
  6. Pour the chocolate mixture into the remaining batter and stir until mixed. Divide the chocolate batter between the two remaining pans
  7. Bake in 375 oven about 30 minutes or until done. Cool layers on racks.
  8. Make the felicity frosting: Combine egg whites, water, sugar and salt in the top of a double boiler beating with a rotary egg beater until mixed. Place over rapidly boiling water, beat constantly with rotary egg beater and cook 7 minutes or until frosting will stand in peaks. Remove from fire, but keep over hot water and beat two minutes longer. Place over cold water and continue beating 3 minutes.
  9. To assemble cake spread each layer with the Felicity frosting. Place a chocolate layer on the bottom, then the light layer, then the second chocolate layer. The frost the side with the remaining Felicity frosting.
  10. When the frosting is set, melt the last 2 squares of the Bakers unsweetened chocolate with the 2 teaspoon of butter and blend. Drizzle the chocolate over the top of the frosted cake and let it drip down the sides.
