Choc/whiskey Expresso Mousse
Was first made for us by Simon Littler at Fallen Leaf. Simply wonderful. Serves 10.

Required Ingredients

Ouncedark Valrohna chocolate
CupConfectioners sugar
¼CupMalt whiskey
Double expresso
PintWhipping cream
PintCream fraiche
Egg yolks
TeaspoonVanilla essence

Preparation Instructions

  1. Whip cream and cream fraiche in a bowl until stiff and set aside.
  2. Melt chocolate over hot water.
  3. Add espresso and whiskey to the chocolate and beat.
  4. Add sugar and beat.
  5. Add egg yolks and beat.
  6. Blend chocolate mixture into the whipped cream mixture and chill.
