- Wash chicken and salt cavities. Blend all ingredients (except Maderia) and brush onto chicken body.
- Roast at 350deg for at least 2 hours.
- Skim fat from juices and add juice to 3T Madiera, with salt and pepper to taste. Boil to reduce.
