Required Ingredients

3 ½Poundeggplant
½Poundsesame paste (tahina)
Tablespoonlemon juice/lime juice
Teaspoonchopped garlic
Pinchcumin (.01 pound)
Pinchred chile (.01 pound)
Poundolive oil
salt & pepper to taste

Preparation Instructions

  1. preheat oven to 350 deg, roast onions and eggplant, clean under running water
  2. chop eggplants and onion and mix with tahina
  3. add rest of ingredients and mix all together; season to taste;
  4. garnish with fresh parsley and serve with fresh pita bread
