Glorious Sponge Cake (lemony)

Required Ingredients

eggs separated
Cupcake flour
¼Cupcold water
Teaspoonlemon extract
Teaspoongrated lemon rind
½Teaspooncream of tarter

Preparation Instructions

  1. Beat 6 egg yolks until thick. Beat sugar in gradually until creamy and lemon colored. Combine water, lemon extract, and lemon rind. Beat in cake flour gradually, alternating with the lemon water.
  2. In a large bowl, beat 6 egg whites until stiff with cream of tartar and salt.
  3. Gradually and gently cut and fold yolk mixture into beaten whites. Pour into ungreased tube pan and bake at 325 deg for 60-65 minutes. When done invert pan and let hang until cold.
