Required Ingredients

Eggs (6 whites, 3 yolks)
¾CupMilk
TablespoonVanilla extract
TablespoonMelted butter
CupSugar
1 ¼CupCake flour ( 2T cornstarch + enough flour to fill C = 1 C cake flour)
1 ½TeaspoonBaking powder
PinchGround nutmeg
TeaspoonSalt

Preparation Instructions

  1. Beat 6 egg whites to medium peaks
  2. Whisk together yolks, milk, vanilla, butter, and sugar until combined.
  3. Sift together flour, baking powder, nutmeg and salt.
  4. Whisk egg yolk mixture into flour mixture until no lumps remain
  5. Add one-third of egg whites to batter; stir until lightened. Then gently fold in remaining whites in two additions.
  6. Label into preheated snowflake iron
  7. Do not peak for at least 3 to 4 minutes; done when light goes out (3-5 min)
