Required Ingredients

CupCrookneck Squash
Eggs
CupMayonnaise
Onion chopped fine
½TeaspoonSalt and white pepper or to taste
¼CupDiced green pepper
¾CupGrated Parmesan cheese
Topping
Buttered Bread Crumbs or butter and bread crumbs

Preparation Instructions

  1. Dice squash (don’t peel) and cook in saucepan until tender and drain well
  2. Beat eggs
  3. Add all ingredients to eggs and pour into buttered 2.5 qt casserole
  4. Dot top with butter and sprinkle on bread crumbs
  5. Bake at 350 deg for 30 minutes
