Apricot-glazed Chicken thighs

Required Ingredients

¼CupSpreadable apricot fruit...large pieces snipped
¼CupHoney
TablespoonSoy
TablespoonMinced ginger
TablespoonMinced garlic
½TeaspoonCayenne pepper
¼Cup Cider vinegar
Bone-in chicken thighs

Preparation Instructions

  1. Preheat oven to 400 deg
  2. In small pan combine spreadable fruit, honey, soy, ginger, garlic and cayenne. Heat over medium heat until spreadable fruit is melted. Remove from heat and stir in cider vinegar.
  3. Line 9x13 pan with foil and arrange chicken I single layer
  4. Pour apricot glaze over chicken, turning to coat.
  5. With skin side up bake uncovered for 40-45 min until golden brown. Brush with glaze several time during baking.
