Mushroom/Swiss Gougere

I think that I used more onion, pepper and prosciutto

Required Ingredients

½Cupwater
Tablespoonbutter (divided 2T and 1T)
½Cupflour
Teaspoonsalt
Teaspoonfreshly ground pepper (tri color is good)
eggs
½Cupfinely diced swiss cheese
2 ½Cupsliced mushrooms
½Cupthinly sliced yellow onion
½Cupthinly sliced red bell pepper
¼Cupthinly sliced proscuitto
Tablespoondried herbs (basil, tarragon ro oregano) I used fresh
salt and ground pepper to taste (for filling)

Preparation Instructions

  1. Preheat oven to 425 deg and spray 9" pie pan with nonstick cooking spray
  2. Bring water and 2 Tbsp butter to a boil over medium high heat in a medium saucepan. Remove from heat and stir in flour, salt and pepper with a wooden spoon.
  3. Beat in eggs, one at a time, stirring vigorously for about 1 minute each time; stir in cheese.
  4. Spoon dough in a circle around the outside edge of prepared dish (or dishes if you use smaller ones), leaving a hoe in the center. Set aside.
  5. Heat remaining butter in a large pan over medium heat. Stir in remaining ingredients and saute for about 5 minutes or until onions are crisp-tender.
  6. Spoon vegetables into center of dish and bake for 20 minutes or until puffed and golden. Serve immediately.
